Partially Defatted Chia Flour is produced by first cold pressing the chia seed for its oil and then milling the remaining protein/fibre fraction. The result is a flour containing approximately 30% protein, 50% dietary fibre, and less than 10% fat.

Partially Defatted Flour forms a mucilaginous gel when soaked in water and has shown in studies to have very high water holding capacity. The flour has numerous useful application in the food industry as a thickening agent, emulsifying agent and stabilizer.

Incorporated into bread, Partially Defatted Chia Flour provides softer consistency and greater stability during fermentation as well as greater yield when compared to standard wheat flour.
